I believe, adding a set of eyes is very important for any bait fish patterns. No matter how strange or ugly it looks, a fly comes to life once eyes are putted on.
The weight of eyes also plays a big role on how the fly swims or sinks which is probably more important for fish like bream than how the fly actually looks like.

For tying small minnow patterns for black bream (on #6 to #10 hook), I use medium size bead chains for eyes. I feel that they have just a right amount of weight for a swimming action that I want to achieve.
With bead chains, the fly swims and hovers on the same plane without going up and down too much as it is being retrieved much like how small bait fish swim. Heavier eyes tend to make a fly move more vertically which looks unnatural some time.
僕は、クロダイ用の＃６や＃１０の比較的小型の毛針には、Mサイズのビーズ・チェインを使っています。川にいる３cmから５cm位の小型のベイトは群れで、もしくは単独で中層辺りをスイスイとゆっくり平行移動をしています。この動きを真似するには、クラウザー系のダンベル型のアイでは重すぎで、むしろ動きは横ではなくジグヘッドの用に縦の動きになってしまいます。シュリンプ系のフライの様に、縦のジギング・アクションが良い時もありますが、クロダイが小さいベイトを狙っている時は、やはり平行移動するアクションに良い反応を見せると思います。
As for colours, I use gold and silver. Some people like to use black, but I like to have a bit of flash with shiny eyes. Gold may be better in the clear water when fish are super spooky, but it will tarnish quickly for some reason. Silver stays shiny and I think it has more appeal to fish in the low light condition.
